MOGHRABIEH
 
 

The dried Moghrabieh grains are mainly made out of semolina. This recipe is one of the most delicious oriental dishes with all the benefits of Gardenia's 100% natural products.

Ingredients:
- 900g (2lb) lamb shanks
- 1 chicken
- 900g (2lb) dried Moghrabieh Gardenia Grain D'or
- 500g grelot (small) onions
- 1 cup chickpeas Gardenia Grain D'or
- 3 tsp. Moghrabieh Spices Gardenia Grain D'or
- 100g of butter
- Flour Gardenia Grain D'or

1-Fry the lamb shanks in butter until golden brown then cook in water adding the chickpeas and 1 tsp. Moghrabieh spices until ingredients are done. Boil the chicken and the grelot onions with 1 tsp Moghrabieh spices and simmer until done.
2-Fry the moghrabieh in butter then gradually add stock from meat and chicken until grains become tender. Add the chickpeas and 1 tsp Moghrabieh spices.
3-To prepare the sauce, fry some flour in butter until golden brown. Gradually mix in the remaining stock. Add the onions.
4-Serve the Moghrabieh with the meat chunks and the chicken pieces, accompanied by the sauce.
