MOGHRABIEH
 
 

The dried moghrabieh grains are mainly made out of semolina. This recipe is one of the most delicious oriental dishes with all the benefits of Gardenia's 100% natural products.

Ingredients:
1-900g (2lb) lamb shanks
2-chicken
3-900g (2lb) dried moghrabieh Gardenia
4-500g grelot onions
5-1 cup chickpeas Gardenia
6-Moghrabieh Spices Gardenia
7-Butter
8-Flour Gardenia

Fry the lamb shanks in butter until golden brown then cook in water adding the chickpeas and 1 tsp. Moghrabieh spices until ingredients are done. Boil the chicken and the grelot onions with 1 tsp Moghrabieh spices and simmer until done.
Fry the moghrabieh in butter then gradually add stock from meat and chicken until grains become tender. Add the chickpeas and 1 tsp Moghrabieh spices.
To prepare the sauce, fry some flour in butter until golden brown. Gradually mix in the remaining stock. Add the onions.
Serve the Moghrabieh with the meat chunks and the chicken pieces, accompanied by the sauce.
